Simple Lemon Chicken Recipe With Infused Olive Oil

In Atlanta, Gio’s Chicken Amalfitano Restaurant has the best lemon chicken.  The owner is from the Amalfi coast in Italy and he has set up a little Italy area with separate gelato, pizza, outdoor bar and chicken dining areas.  You feel like you are in Italy.

Since Gio’s is about 40 minutes away from our house and is often crowded, I wanted to learn how to make Chicken Limone at home.  After several experiments with lemons and olive oil, I discovered that using lemon infused olive oil from my favorite balsamic vinegar and olive oil tasting store was the key.

If you aren’t lucky enough to have a gourmet tasting store in your area, Whole Foods, Trader Joe’s and many online stores have infused olive oils.  Every foodie needs a kitchen cabinet filled with various flavor infused olive oils and vinegars.  Lemon infused olive oil has wonderfully refreshing lemon flavor without the harsh acidic undertones.

Lemon Chicken Recipe

Lemon Infused Olive Oil
Salt and Pepper to Taste
1/2 C of White Wine
4 Cloves of Fresh Mince Garlic
4 Sprigs of Fresh Parsley Chopped
Rain Crow Ranch Whole Chicken Cut Up

Preheat oven to 400 degrees.

Wash and dry the chicken with a paper towel. You don’t want a wet chicken because the skin won’t brown properly.

Generously coat all sides of each chicken piece with lemon infused olive oil plus fresh ground salt and pepper to taste.

Place in a baking pan or 2 cast iron skillets.  Don’t crowd your chicken pieces.  Cook skin side facing up.

Baste the chicken occasionally with the drippings from the pan.  Cook the chicken until the juices run clear (appox 35 to 50 minutes depending on the size of your chicken)

Remove from oven.  Let rest about 5 to 10 minutes tented with aluminum foil.

Combine minced garlic, white wine and the chicken/olive oil pan drippings in a small sauté pan.  Heat on medium and reduce the mixture while the chicken is resting.

Drizzle the reduction on the chicken and serve with fresh chopped parsley.

You can use whole chicken with this recipe.  It will just take approx. twice as long to cook.
