The “Big Game” is Sunday and even if you’re not excited about the game, who’s not excited about the food? Super Bowl Sunday is just another Food Holiday in my book (unless the Steelers are playing, but that is another matter entirely.) There’s nothing more fun than getting together with family and friends, listening to the guys making friendly wagers; albeit under their breath because it’s against house rules, and doing so over some mouthwatering food!

At our game day gatherings, the general staples are: 1. Meat (shocker, I know,) 2. Some sort of dip and chips, and 3. Bacon, you have got to have bacon. The Pasture Pork Sampler*, 12oz each Smoked Italian Sausage, Smoked Bratwurst, Smoked Pork Sausage, and Uncured Dry Rubbed Bacon, has everything we need to get this party started!

*All RCR Smoked Sausages included in the Pork Sampler are fully cooked. Bring to temperature by steaming in a pan with a small amount of liquid or on a grill.


Game Day Brats 

Game Day Brats:


12 oz Smoked Bratwurst

4 oz Bacon

1 Onion

1 Clove Garlic

2 T Butter

Hot Dog Buns

1. Warm Bratwurst as desired

2. Dice bacon and cook until crispy, place on paper towel to drain

3. Halve and slice onion, mince garlic, sauté together in butter until onions are translucent and soft

4. Assemble on steamed or grilled buns with your favorite condiments


Crockpot BBQ Sausages

Crockpot BBQ Sausages:


3 Italian or Pork Sausages

8oz Grape Jelly

16oz BBQ Sauce

Dash of Garlic Powder

Hot sauce to taste

1. Slice sausages into 1/2 inch thick pieces

2. Combine all ingredients with sausages in slow-cooker on low for about 4 hours



Smoked Sausage Dip:


1 Smoked Italian Sausage

1 Smoked Pork Sausage

8oz Bacon

16 oz Cream Cheese

8 oz Sour Cream

8 oz Sharp White Cheddar Cheese

1 Onion

2 T butter

2 Cloves Minced Garlic

2 Diced Jalapenos (seeded and deveined)

1. Slice Sausages into 1/4 inch thick slices

2. Dice bacon and cook until crispy

3. Finely dice onion and sauté with garlic and butter until soft and translucent

4. Mix softened cream cheese, sour cream, and grated cheddar cheese

5. Add in the rest of the ingredients and mix together

6. Place in baking dish and bake at 350 for 20 minutes or until the dip is bubbly



Smoked Pork Sausage, Cheese and Mustard Tray:

3 Smoked Sausages

Assorted cheeses

Assorted mustards

Assorted Crackers

1. Warm sausages and slice into 1/2 inch thick pieces

2. Serve on a tray with your favorite assorted crackers, cheeses and mustards
