Healthy & Hearty Mushroom Beef Bolognese Recipe

When I'm in the mood for Italian, mushroom beef bolognese always comes to mind.  It's healthy, quick and easy to prepare.  I can make a great meal for family with relative ease. 

1 lb. rigatoni pasta
1/2 cup baby carrots
1 medium onion, quartered
1 1/2 tsp olive oil
1 pkg sliced shiitake mushrooms (button mushrooms can be substituted)
1 lb. grass fed ground beef
1/2 cup dry white wine
1 squash, quartered lengthwise and sliced
1 jar (26 oz.) marinara sauce

In a large pot, boil lightly salted water, cook pasta as directed.  Put carrots and onion in a food processor; pulse until finely chopped.  Heat oil in a large nonstick skillet.  Add carrots, onions and mushrooms; cover and cook over medium-high heat, stirring often, cook at least 4 minutes or until almost tender.

Add grass fed ground beef, cook until no longer pink, breaking up clumps.  Stir in wine and squash; boil 1 min.  Stir in marinara sauce; bring to a boil.  Reduce heat and simmer 2 minutes or until squash is tender.  Pour over drained pasta; toss together.
