Grass Fed Beef Chili Recipe
Chili is one of the long favored cold weather classics on our family farm. It is one of those great fix-in-the-morning meals that allow you to come home to the welcoming aroma of chili ready for the table. It is a special delight when working outside on the farm on a cold day.
Chili Recipe
2 pounds ground grassfed sirloin
1 cup thinly sliced onion
3 tablespoons flavorless oil such as grape seed oil
1 large can whole tomatoes
1 can kidney beans (can use different beans if prefer)
3 tablespoons chili powder
salt and pepper to taste
Dash (or more) Cheyenne pepper
4 garlic cloves
3 strips of bacon
Sauté onion in oil until tender. Add tomatoes, beans, chili powder,
salt, pepper and cayenne. Peel garlic cloves and add whole. Simmer
for 30 minutes. Remove garlic cloves. Dice bacon and fry until
crisp. Add ground beef to bacon and cook stirring frequently until
well browned. Drain any excess grease. Add to tomato mixture. Cook
until thoroughly heated and serve.
